Vegan Cauliflower Soup

This is a deliciously creamy plant based soup that is perfect for any time of year and is incredibly easy to make… and eat!  

Ingredients:

‣ 1 cauliflower heads (medium to large size) cut into small pieces

‣ 1 medium onion, chopped

‣ 4 garlic cloves, chopped

‣ 4 cups of Vegetable stock water

‣ 3 tablespoons of Olive Oil

‣ 3 tablespoons nutritional yeast

‣ 1 cup of Oat milk or preferred non dairy milk

‣ ¼ teaspoon of Himalayan salt

‣ Pinch of Ground pepper

Cauliflower soup

Method:

1) Sauté the onion and garlic for approximately two minutes in the olive oil

2) Add the Cauliflower and stir in

3) Pour vegetable stock/water (approximately four cups) over

4) Add salt and pepper

5) Bring to boil

6) Add oat milk

7) Simmer for 15 minutes approximately

8) Add nutritional yeast

9) Leave on heat for two minutes more

10) Blend and serve

Note- the above quantities serve a lot of people (approximately ten) so if you are serving less then you can half the above ingredients.
