Nori Salad

This simple salad can easily become one of your go-to-favourites! The dressing is made with cupboard essentials and poured on top of a deliciously simple base, this is perfect for lockdown and beyond!

Ingredients:

‣ 4 sheets of nori (cut into medium squares)

‣ 2 cucumbers sliced in halves

‣ 1 romaine lettuce chopped into medium pieces

 

For the dressing:

‣ 2 cloves of garlic (chopped into very small pieces)

‣ 1 tablespoon of dijon mustard

‣ 1 tablespoon of agave

‣ 4 tablespoons of balsamic vinegar

‣ 1 tablespoon of olive oil

‣ 1/2 teaspoon of black pepper

‣ 1/2 teaspoon of sea salt

‣ 1 teaspoon of dried basil

‣ Mix all very well in a small jar and shake

Method:

  1. In a big bowl add chopped lettuce, cucumbers, and nori sheet 

  2. Add the dressing mixture to the salad

  3. Add as 1 tablespoon or as much as you like to the salad the following seeds:  sunflower seeds, pumpkin seeds and crushed flaxseeds

  4. Mix well and enjoy!

Note: You can add anything else you have in your kitchen that you like such as sweet corn, cooked beans, or shredded carrots, feel free to be creative and taste
