Quinoa Risotto with Mushrooms & Lemon

A zesty way to liven up your quinoa repertoire, you will love how these simple ingredients can be combined to make this delicious and nutritious dish.


‣ 3 tablespoons olive oil

‣ 1 chopped red onion (to medium pieces)

‣ 3 cups of button mushrooms or any kind (sliced)

‣ 2 cups of pre-soaked quinoa (any colour)

‣ 4 garlic cloves

‣ 4 & 1/2 cups of water

‣ 1 vegetable stock

‣ 1 lemon (juiced and zested )

‣ 1/3 cup of white vinegar

‣ 1 tablespoon of soya sauce

‣ 2 heaped teaspoons of dry thyme

‣ 2 spring onions chopped to small pieces

‣ 1/3 cup of nutritional yeast

‣ A pinch of salt

‣ A pinch of pepper

Quinoa Mushroom Risotto with Lemon Zest.


  1. Sauté onions and garlic in a cooking pot with olive oil on high heat for two minutes

  2. Add the mushrooms, quinoa, water and vegetable stock

  3. Mix well till the mixture boils

  4. Reduce to heat to medium and leave it for 10 minutes

  5. Add soya sauce

  6. Add the juice and zest of 1 lemon

  7. Add spring onions (just keep 1 tablespoon for later decoration)

  8. Add nutritional yeast

  9. Add thyme, salt, and pepper

  10. Leave to cook for few more minutes until liquid is absorbed

  11. Dish up to a bowl of your choice and add chopped spring onions on top for decoration
