Leek Soup

This creamy plant based soup is packed with delicious flavours and bursting with nutrition. It makes a gorgeous starter before any meal, or can happily be a main meal in itself.


‣ 4 Tablespoons of olive oil

‣ 1 Large white onion, chopped

‣ 2 garlic cloves, chopped

‣ 3 medium size sweet potatoes, roughly chopped

‣ 3 leeks, chopped

‣ 1 heaped teaspoon of Turmeric

‣ 1/2 teaspoon cinnamon

‣ 1/2 teaspoon of Himalayan Salt

‣ Pepper as desired

‣ 1 litre of vegetable stock water

‣ A pinch of crushed chili flakes

1) Saute onion and garlic in olive oil and garlic on a medium heat

2) Add sweet potatoes and cook for five minutes

3) Add leeks and cook for a further five minutes

4) Pour over Vegetable stock water

5) Add turmeric , cinnamon , salt and pepper

6) Stir in all the ingredients and bring to boil

7) Lower the heat down to medium and let it simmer for 20 minutes

8) Once all Vegetables are cooked and soft, blend together to form a creamy consistency
