Chocolate Brownies

This incredible brownie should come with a warning to all chocoholics... It is so good and easy to make, you may eat it all in one sitting! An instant crowd pleaser, you will be tempted never to make another dessert again!


‣ 100 grams dark vegan chocolate

‣ 2 tablespoons of coconut oil

‣ 2 drops of vanilla extract

‣ 3 flax ‘eggs’ (3 Tablespoons of flaxseed and 6 tablespoons of water)

‣ 200 grams of pitted dates (preferably medjool dates) soaked in a little hot water

‣ A pinch of sea salt

‣ ½ teaspoon of baking powder

‣ ½ teaspoon of baking soda

1) In a food processor, begin with the dry ingredients so blend the broken dark chocolate bar, baking powder & baking soda

2) Add the salt, the flaxseeds ‘eggs’ and dates (you can leave a little of the soaking water in the mix)

3) Add the vanilla extract and coconut oil 4) Blend until smooth and creamy

5) Transfer mixture to a loaf tin coated lined with parchment paper (or greased with coconut oil)

6) Place into a preheated oven for 20 minutes at 160 degrees

7) Check it is done with a toothpick (should come out clean)

8) Enjoy this dessert plain or with your favourite vegan ice-cream
