Vegan Bolognese
A classic recipe that is so easy to veganize! Your family can enjoy eating traditional Bolognese and we dare any non-vegan to tell the difference! Not only is this tasty and easy, but it’s also a super nutritious meal when served with healthy pasta.
Ingredients:
‣ 4 tablespoons of olive oil (coat the bottom of your pan)
‣ 1 medium size red onion (chopped)
‣ 2 medium gloves of garlic (chopped)
‣ 1 medium carrot (chopped)
‣ 1 cup of rehydrated soya mince (approximately 1 cup dry soya minced pieces soaked for ten minutes in hot water and drained)
‣ 1 tin of chopped tomatoes
‣ 1 tablespoon of tomato paste (or vegan tomato ketchup)
‣ ¼ teaspoon Himalayan salt
‣ ¼ teaspoon pepper
‣ ½ teaspoon of dried oregano
‣ ½ teaspoon of dried basil
Method:

Sauté onions, carrots and garlic in olive oil for a few minutes until soft

Drain soaked minced soya pieces and add to cooking pan

Add tomatoes and paste

Season with salt, pepper and herbs

Allow to simmer for 15-20 minutes
Serve on top of wholegrain or gluten free pasta of your choice
